I feel sort of the same way, but I also never want to remove the risk factor. I personally find it much more tolerable on instant infection. Because then it just happens and its all said and done in a split second. No need to find a safe place to check your wounds wondering if you got bit, no need to sit and wallow when you find out its a bite.
Just, boom, dead.
After death you can just create another character in the same world. You'll lose any gained EXP, that's for sure, but your base/home and wandering zombie with all your gear will be there - you just need to find it.
You can also in the Sandbox options (before starting the game) turn off the probability to be infected by zombies to 0.
Third way is to install some mods from workshop that allows you to create cure for zombification. It's up to you which way is most suitable for you.

This. However, if I'm able to get clear, I will always try to make it home to drop off everything I'm carrying and then just go try to kill as many zeds as I can barehanded.

I turn it off, takes some of the danger away but less frustrating then losing a high stat character to a small mistake. I like a longer game where I build extensively and explore extensively though, which is not for everyone. I can say that when I made the decision to turn it off, my enjoyment of the game went up significantly.

I usually play with no infection but super powerful zombies, so if you get grabbed you are usually done for but at least have a chance of survival
On. Zombie in 12 hours if infected.
I like the suspense after a scratch, but don't feel the need to draw it out for days.
I have played with instant zombie in the past but insta zombie is just too harsh for me.
Always on though. Its a zombie game after all.
I think it is super cool the Developers give us all the toggles and settings. Everybody plays the game they want.
I've played with it vanilla most of the time, but sometimes I turn it to always infected when I want to play a bit more recklessly, and it gives you a reason to utilize first aid.
I feel like the problem with the current death system is that very few people want to play a world where you have more than 1 life, because it feels like it defeats the purpose of "survival" if you can just get infinate lives.
I could maybe see the point if you wanted to roleplay like a family leaving a shelter one by one to establish a safe place or something after the last one dies, but I feel most people just want permadeath with no restarts.
